Pumpkin Walnut Muffins

I found a really simple Pumpkin Walnut Muffin recipe in a Halloween book. Robynn and I made them and they turned out super delicious. They were not to sweet so would go excellent as a dinner muffin. However, they do also taste delicious as a dessert with honey cream cheese on top! YUM!

 

Here is the recipe


1 C. Pumpkin mashed.
1/2 C. Brown Sugar, packed
1/4 C. Unsalted Butter
2 Eggs

In bowl mix these together until well blended

1 C. All Purpose Flour
1C. Whole Wheat Flour
1/2 teaspoon Cinnamon
2 teaspoon Baking Powder
Dash of Salt

In Separate bowl swift these ingredients together. Now combine Flour mixture to Pumpkin, stirring until well mixed.

Stir in
1/2 C. Chopped Walnuts.

Fill muffin tin with liners and scoop in batter. Bake at 375 F or 190 C for 20min or until toothpick comes out clean.
These are the first muffins, I have made, where Robynn will eat the whole thing...not just the frosting on top.
